First things first- it’s close to Valentine’s day and while I don’t personally celebrate it, it’s a great day to honor your relationships in life. Many of us use this day to celebrate the relationship between a life partner, but if you- like me are single, why not use this day to honor yourself? Honor who you are or have become as a person, honor the relationship you have with your closest friends or family. Simply use this day to devote to the most important people in your life- wether it’s a life partner, friends or family.
Take a break, make this cake & simply just be.
This Healthy Brownie has amazingly three ingredients; walnuts, raw cacao and soft dates. I have to thank Sarah Britton from My New Roots for developing this amazing, life changing recipe. I didn’t want to mess around with the recipe that much because it’s already pure perfection, but I have changed the measurements slightly- or actually I didn’t measure, which made it differ slightly from the original.
Walnuts is a great source to omega 3- and one of the best plant source for omega 3. Omega 3 is an essentially fatty acid which we don’t produce ourselves. This means we have to get it through our diet and it is important for our skin, brain, heart and body. Raw cacao is another amazing ingredient with its bitter, yet sweet taste.
Did you know that cocoa contains a bunch of ‘endorphins’ which is also known as the ‘happiness hormone’? When we eat chocolate- we actually feel happier and loved. I also read once that eating chocolate releases the same feelings as if you were kissing someone (!). All the more reason to eat a slice of this Raw Walnut Brownie for valentine- single or not!

Raw Walnut Brownie
200g walnuts
20 dates, soft
2 tbsp raw cacao powder
1 pinch salt
50g walnuts, roughly chopped
Direction
- Combine all the ingredients in a food processor and blend until the mixture starts to become sticky and gooey. This will take a couple of minutes, so be patient- I know it’s hard!
- Press the dough into a small, squared pan/tray and sprinkle roughly chopped walnuts on top. Yay- you’re soon there!
- Leave in the fridge or freezer to cool- depending on when you want to eat it. (Fridge, am I right?)
- Cut into squares and enjoy immensly.
