This dish is one of my favorite summer breakfasts- it’s so light, sweet and tangy all at the same time!
I made this in Italy at one of the villas we lived at in Umbria- finally a place where we could make our own breakfast. Don’t get me wrong, I love eating out- experiencing new cultures and what they eat, but after a while cappuccino and a panini is not the best option.
A lovely blend of ice cold milk, oatmeal and a warm plum compote swirl in. Served with a dollop of local yogurt. Yum! I hope you enjoy it!
Oatmeal with Plum Compote

Ingredients
Plum compote
10 plums, stone pitted
1 orange
1 decilitre honey
1 tbsp corn starch + 1 tbsp water
Cereal
4 decilitre quick oats
4 decilitre milk
2 tbsp yogurt/ Skyr
Instructions
Roughly chop the plums and orange and put it in a saucepan.
Bring it to a boil together with the honey. Adjust as needed.
Leave to simmer until reduced to half.
If the compote does not thicken naturally, add corn starch diluted in water and stir consistenly as it thickens.
Arrange the quick oats in a bowl together with the milk.
Stir in the warm- or slightly cooled compote.
Serve with a dollop of cold yogurt or home made Skyr.
