Skyr with Strawberry Compote

Yield 2 persons


500 gram strawberries

0,5 dl water

1 tbsp corn starch/ potato flour + 1 tbsp water

sugar - if needed

Skyr/ yogurt


  1. Add strawberries and water in a saucepan and gently simmer until soft
  2. Let it simmer until the strawberries have thickened slightly- reducing it by almost half.
  3. If it doesn't thicken, add a tablespoon of corn starch diluted in water and stir it in until thick.


Normally it wouldn't be neccessary to add any sugar to this recipe, as the berries are sweet enough on its own. If you do happen upon this recipe when the strawberries are not in season or you find yourself in a place where they are not as sweet- simply add a sweetener to your liking.
