A berry we are all so very fond and proud of- a berry that we simply can’t get enough of and would pay a price so high, it would empty our wallets. Norwegian strawberries is considered the best berries in the entire world, though I believe every Nordic country would have a say in it.
The long days and cold nights gives the berries the sweetest and aromatic taste, which applies for all our berries. More than often, I prefer to eat my strawberries au natural- as it’s not really needed to mess around with its beauty.
To change it up a bit I made a strawberry compote to swirl up in a bowl of home made Skyr. If you don’t happen to have Skyr, any yogurt will work just as good for this lovely, simple dish.
Sprinkle a lovely granola on top and you have a wonderful little in between meal- or dessert!
Skyr with Strawberry Compote
Yield 2 persons
Ingredients
500 gram strawberries
0,5 dl water
1 tbsp corn starch/ potato flour + 1 tbsp water
sugar – if needed
Skyr/ yogurt
Instructions
- Add strawberries and water in a saucepan and gently simmer until soft
- Let it simmer until the strawberries have thickened slightly- reducing it by almost half.
- If it doesn’t thicken, add a tablespoon of corn starch diluted in water and stir it in until thick.
Notes
Normally it wouldn’t be neccessary to add any sugar to this recipe, as the berries are sweet enough on its own. If you do happen upon this recipe when the strawberries are not in season or you find yourself in a place where they are not as sweet- simply add a sweetener to your liking.
