Add strawberries in a saucepan and gently simmer until soft
Let it simmer until the strawberries have thickened slightly- reducing it by almost half.
Add the gin if wanted. Boil for a couple of minutes to get rid of the alcohol- or don't!
Normally it wouldn't be neccessary to add any sugar to this recipe, as the berries are sweet enough on its own. If you do happen upon this recipe when the strawberries are not in season or you find yourself in a place where they are not as sweet- simply add a sweetener to your liking.
