Royal Hot Chocolate

100 g chocolate

0,5 dl water

1 dl whole fat milk

1 dl full fat cream

  1. Add water to a pot and warm it up on low heat. 
  2. Add the chocolate and stir until melted. 
  3. Pour over the milk and bring up to a quick simmer. 
  4. Add cream to a bowl and whip with a handmixer until you get whipped cream! 
  5. Serve hot chocolate in cute royal mugs with whipped cream. 
  6. Cuddle up in a blanket!

Nordic Granola; Milk Ring with Caramelized grains

Prep Time 24 hours

Ingredients
  • 500 decilitre milk
  • 1 decilitre soured milk like kefir
  • 1 decilitre oatmeal
  • 1 decilitre rye grains
  • 1 decilitre spelt grains
  • 1 decilitre sugar/honey

  • 1 decilitre oatmeal
  • 1 decilitre rye grains
  • 1 decilitre spelt grains
  • 1 decilitre sugar/honey


Instructions
  1. Heat the milk just below the boiling point and remove from the heat.

  2. When cooled, add the soured milk and stir well.

  3. Let sit for about 24 hours at room temperature until it has become solid and thick-ish.

  4. Can be eaten at this point, but I prefer to let it sit in the fridge for a couple of hours before serving- to get it nice and cold.

  5. For the caramalized grains heat a pan with sugar.

  6. Add the grains when the sugar has melted and slightly toss it around.

  7. Remove and let cool on a baking sheet until cooled.

Skyr with strawberry compote

  • 500 gram strawberries
  • 0,5 decilitre local gin for the grown ups or any type of aromatic alcohol
  • sugar if needed

  • 500 gram strawberries
  • 0,5 decilitre local gin for the grown ups or any type of aromatic alcohol

Instructions
  1. Add strawberries in a saucepan and gently simmer until soft
  2. Let it simmer until the strawberries have thickened slightly- reducing it by almost half.
  3. Add the gin if wanted. Boil for a couple of minutes to get rid of the alcohol- or don't!
Recipe Notes

Normally it wouldn't be neccessary to add any sugar to this recipe, as the berries are sweet enough on its own. If you do happen upon this recipe when the strawberries are not in season or you find yourself in a place where they are not as sweet- simply add a sweetener to your liking.
