Pick-Me-Up Smoothie Bowl

A balanced life

This Green Smoothie is a smoothie I always go to when I feel i need a little “pick-me-up” or need a boost in my vegetable intake. This is a very simple smoothie with a few ingredients. A green smoothie is not something to mess around with- for a long time I struggled hard with making a good green smoothie. The always turned out weird and exactly how they looked- unappetizing, but not this time. This green smoothie has a sweet, deliious flavour and has a lovely and creamy texture.

I hope this Green Smoothie will inspire to a more balanced lifestyle in many ways. I believe a lot starts with a balanced diet. I would like to focus on the word “balanced diet” vs “healthy diet”. I don’t believe the word healthy brings a good vibe, but rather guilt, pressure and stress. A balanced diet refers to eating what you want- when you want, but in moderate amounts. As long as you have some knowledge around nutrition, common sense and a good, decent amount of appetite you don’t have anything to worry about. Remember that your body will be with you for the rest of your life- so treat it well.

Ingredients

Avocado has the good kind of fat that creates the smooth, lovely texture and the amazing flavor. Using avocado in cooking is a great way to create and enhance flavor. Avocado is also rich in vitamine B, potassium, folate and a good source to dietary fibre.

Spinach is one of the best leafy vegetables out there. This will for sure keep your immune system up and running. It is full of dietary fibre, vitamine A/B/C/E/K, potassium, copper and magnesium. Spinach doesn’t have much taste, which makes it a perfect ingredient for smoothies and healthy desserts.

Dates is a very versatile fruit. This little fruit can be used in everything from savory to sweet dishes. Check out your local grocery shop for soft dates!

For this recipe you can use the type of milk that you prefer- everything from cows milk to almond milk. I’m very fond of the coconut milk I get from my super market (Not canned coconut milk, but a coconut milk made for drinking). I find it makes a sweet, nice taste to my smoothies. Make sure the milk type you chose has natural or added calcium as this is one of the most important things we need to get enough of. Calcium make sure our bones are strong and healthy, something everyone needs- especially women! So whether you are vegan, have milk allergies, lactose intolerance or for some reason don’t drink any milk, make sure you get your calcium intake from somewhere else- or make sure the milk you are fortified with calcium.

Ingredients

2 avocados

2 handful spinach

10 dates

1 decilitre oatmeal

5 decilitre milk

1 teaspoon spirulina (optional)

1 handful of almonds

1 handful of quick oats

Instructions

Peel the avocado and bit the dates.

Put the avocado, dates, spinach, spirulina and oats in a blender.

Add the milk and pulse until smooth.

Serve with almonds and quick oats.

Nordic Cuisine

The best way to understand the Nordic region’s food culture is more than a trip to Ikea- it’s understanding our traditions, our nature and our people.

Nordic cuisine has never been extravagant, nor has it been fancy- it can best be described with the words of my favorite cafe in Oslo; “By serving a simple slice of waffle with strawberry jam and brown cheese with a cup of coffee on the side”. Nordic cuisine is known to be simple and with few ingredients- ingredients from the areas where we live and the lands surrounding us- like the woods, the sea, the mountains and the fjords. A blend between fresh, seasonal and preserved flavors- often put in jars and stored away in a dark pantry somewhere on a farm- only to be enjoyed and devoured throughout the seasons.

Food is one of the most important things we have in life- and we should all have enough knowledge about food to be able to live a long and happy life. It should not be a burden- nor should it be boring. Food should be something that makes you thrive to be able to live the life you want, it should bring people together in the most wonderful way and last but not least- it should be fun.
