Norwegian Chocolate Cake

How Scandinavian recipes should be?

Here is a recipe for one of my favorite chocolate cakes of all times. Simple, easy and delicious- how Scandinavian baking and cooking should be. This is the chocolate cake every Norwegian is grown up with, being one of the stable foods at every childs birthday party or even when you get invited to a cup of coffee. Its airy cake with its delicious, buttery- coffee frosting is just to die for, really, which is something I feel I have been saying a lot lately, but I truly mean that. The shredded coconut on top gives that extra umpf when it comes to taste and texture. A cake you shouldn’t miss out on, why not try a Norwegian Chocolate Cake the next time you feel like serving something easy, yet delicious?

Making this cake takes around 30 minutes all together, which makes it perfect to do in a rush, maybe that’s why it is loved in every busy home.

Norwegian Chocolate Cake

Makes one medium pan- around 15-20 pieces

  • 200g butter
  • 2 dl milk
  • 5 eggs
  • 4 dl sugar
  • 4 dl fine wheat or spelt flour
  • 1 dl cocoa powder
  • 2 tsp baking soda
  • 2 tsp vanilla sugar

Frosting:

  • 75g butter (melted)
  • 1/2 dl strong coffee
  • 4 dl powdered sugar
  • 2 tbsp cocoa powder
  • 2 tsp vanilla sugar

Direction:

  1. Preheat the oven to 200 degrees celius.
  2. Melt the butter and add milk. Whip eggs and sugar until big, fluffy and stiff.
  3. Mix all of the dry ingredients together and shift this over the egg and sugar mix.
  4. Add the butter and milk and blend it all together, making sure all the air stays intact.
  5. Pour over in a medium/big pan and bake in the oven for around 20 minutes. Let it cool before you make the frosting.
  6. Mix the frosting ingredients together and pour over the cooled cake.
  7. Drizzle som shredded coconut ontop and let it set for a couple of minutes before serving.
  8. Freezes well.

    Must try, your recipe sounds delicious! But what does “dl” stands for ? (e.g. 4 dl sugar)

      Thank you 🙂 It stands for decilitre, as we don’t use cups here in Norway 🙂 It’s super easy to convert decilitre to cups on google! 🙂 Thanks for making me aware on the fact that it’s not understandable for everyone- I will change this in the future 🙂

Nordic Cuisine

The best way to understand the Nordic region’s food culture is more than a trip to Ikea- it’s understanding our traditions, our nature and our people.

Nordic cuisine has never been extravagant, nor has it been fancy- it can best be described with the words of my favorite cafe in Oslo; “By serving a simple slice of waffle with strawberry jam and brown cheese with a cup of coffee on the side”. Nordic cuisine is known to be simple and with few ingredients- ingredients from the areas where we live and the lands surrounding us- like the woods, the sea, the mountains and the fjords. A blend between fresh, seasonal and preserved flavors- often put in jars and stored away in a dark pantry somewhere on a farm- only to be enjoyed and devoured throughout the seasons.

Food is one of the most important things we have in life- and we should all have enough knowledge about food to be able to live a long and happy life. It should not be a burden- nor should it be boring. Food should be something that makes you thrive to be able to live the life you want, it should bring people together in the most wonderful way and last but not least- it should be fun.
