All about tradition!
Multekrem, or cloudberry cream is one of the most traditional desserts here in Norway – we usually serve this airy dessert every Christmas – and we serve them with krumkaker. In my family we make them extra boozy with a touch of cognac. Cloudberries might be one of the most expensive berries here in Norway – if not the most expensive. They can only be found in the mountains, and they can be quite rare – if you find a spot, you keep it to yourself. 300 grams of frozen mulberries costs 100 NOK. So this is a dessert you make on special occasions.
If you can’t find frozen or fresh berries where you live, you can see if you can find cloudberry jam and mix that up with whipped cream. Keep in mind the jam will be sweet, so you might want to skip the sugar in the cream.
Multekrem | Cloudberry cream
4 dl cloudberries
2 tbsp sugar
2 tbsp cognac, aquavit or whiskey
3 dl cream
- Add cloudberries, sugar and alcohol in a bowl. Stir until the sugar has dissolved and let sit for an hour.
- Whisk cream until whipped cream.
- Carefully blend the cloudberry mix in to the cream.
- Serve straight away.
