Egg nog for Christmas

Egg nog is not the typical Scandinavian drink – we do have a version of it, but we call it egg liquor and it’s not really the same. We also have a dessert that is whipped egg yolk and sugar, which can be somewhat close to this – but still, not. My family, on the other hand, have egg nog for Christmas every year. Why? because my stepmom is half American!

This is one of her many American traditions and I really, really love it. This has the perfect combination of being full, airy, light and so decadent. There’s a lot of recipes out there for Egg nog and I havn’t tried that many different ones – but I must say that this takes the cake! It’s easy and utterly delicious.

Egg nog

Serves 10

6 eggs

250 g powdered sugar

2,5 dl bourbon

1 litre full fat cream*

1 tsp nutmeg

  1. Separate the egg yolk from the whites.
  2. Add yolks and powdered sugar in a whisking bowl. Whisk until big, fluffy and stiff.
  3. Add bourbon.
  4. Whisk cream to whipped cream and carefully fold into the mix.
  5. Set in the fridge for and hour to get rid of the taste of “egg”.
  6. Whisk egg whites until stiff and carefully fold into the mix.
  7. Serve immediately with grated nutmeg on top or store in the fridge until your guests arrive.
  • Use lactose free cream for a low FODMAP version

Nordic Cuisine

The best way to understand the Nordic region’s food culture is more than a trip to Ikea- it’s understanding our traditions, our nature and our people.

Nordic cuisine has never been extravagant, nor has it been fancy- it can best be described with the words of my favorite cafe in Oslo; “By serving a simple slice of waffle with strawberry jam and brown cheese with a cup of coffee on the side”. Nordic cuisine is known to be simple and with few ingredients- ingredients from the areas where we live and the lands surrounding us- like the woods, the sea, the mountains and the fjords. A blend between fresh, seasonal and preserved flavors- often put in jars and stored away in a dark pantry somewhere on a farm- only to be enjoyed and devoured throughout the seasons.

Food is one of the most important things we have in life- and we should all have enough knowledge about food to be able to live a long and happy life. It should not be a burden- nor should it be boring. Food should be something that makes you thrive to be able to live the life you want, it should bring people together in the most wonderful way and last but not least- it should be fun.
