One might say I’ve gone quite mad for beets- which I’m sure I have and it has made me oh-so creative in the kitchen. I’ve been wanting to add beets to everything lately and it has much to do with our Norwegian food blog challenge where this months theme is beets. It’s making me realize new combinations and flavors that I would never have thought of.
Some of the sweetest and most plump berries are now ready to be devoured as the season upon us is bursting with berries. Strawberries had their season in july and now is the time for the most delicious blueberries, lingonberries and rowanberries. I made Beet & Berry Jam. Seasonal, plump cherries and blackberries with a touch of earthy beets makes for a sweet, indulgent jam.
The chia seeds gives the jam a wonderful consistency and a higher nutritional value. I added pectin for a more preservative effect to make it last longer.
Perfect on cheese or newly baked bread.
