Autumn is sneaking up on us, with it’s crisp breeze and vibrant leaves falling down in the most elegant manner. Call me crazy, but the transition from summer to autumn is something I really enjoy. Where the sun is still strong- warm, soothing rays on the skin with her slightest touch, where the air feels crisp and raw- just enough to put on your prettiest trench coat and perhaps a woolen scarf to feel cozy.
With her comes the sweetest, satisfying fruits and berries you could ever imagine – plums (think; pie), apples (think; cake), blueberries (think; with milk) and raspberries amongst some of them. I’ve been all over raspberries this year and I’ve been eating it more than blueberries, which is a big deal- because I love blueberries. Blueberries with the deepest, darkest color can be found in the nordic region- and we couldn’t be more proud of them. When the blueberry season kicks in- there’s not much else to be eaten.
This Nordic Skyr and Raspberry Smoothie is inspired from this season and is best made when the raspberries are in season and freshly picked (or bought). With a dollop of Skyr, this makes for a filling snack, but if you do not have Skyr- yogurt is fine (high fat greek yogurt sounds ah-mazing).
