Earlier this morning I saw a crow sitting on the top of the tree outside our window. He struggled to keep his balance, but managed nontheless. The leafless branch kept swaying up and down as he moved- and his wings justifying the movement. It was like he wanted to be on top of the world for a second, having the view of a king up there- I wouldn’t blame him. I took my eyes off him for a second- and when I looked back, he was gone.
Today is the first sunday of four traditional sundays we like to call ‘advent’- the time before christmas. The first sunday of advent always start four sundays before December 24th- our christmas eve. As the tradition goes- we decorate our windows with a special type of advent-candles as well as burning four living candles- one new each sunday.
I like to spend the first sunday of advent getting in to a christmassy kind of mood- christmas music and good cup of home made mulled wine. It’s a way to look forward to the time ahead. For this sunday I have a special recipe I want to share with you- a dessert you can carry with you to christmas parties- or when you and your friends have a get together- Nordic Panna Cotta with Skyr and Wild Berries.
Skyr is a delicious yogurt from Iceland with its own special taste and consistency. Thicker than regular yogurt, slightly more sour in taste- with a natural sweetness. It is also considered one of the healthiest yogurts in the Nordic countries as they have a low amount of fat and a high protein content.
