When the season is at its darkest, one would want to feel energized- and to make an effort doing so. Not much is needed to make this happen- in fact, very little. What I tend to do is make a refreshing juice to get me going. A juice that hydrates and nourish the body that gives energy when you need it.
This is not your normal kind of juice- this will change how you look at juices completely! This is juice with coconut milk– to make it more creamier- more sattisfying and filling. I like to add a lot of milk- so much so I should call it coconut milk with green juice.
This juice is filled with goodies such as cucumber, spinach, fennel and plant milk- all for a little pick me up during the day. I added coconut oil for the pleasant taste and energy as well as a scoop of hemp protein to add a little more nutrients to get you going through the day.
Last saturday I took a stroll around Sognsvann to- nothing better than to spend the day walking slowly and soaking in every moment. To slow down and relax after a long week. The scenery was amazing- the sun was shining like never before and a mist covered the ice-covered lake while people ice skated through it.
Green Winter Juice
2 apples, green
2 fennel bulbs
2 handful spinach
1 ginger, thumb size
1 tbsp hemp protein*
coconut milk, full fat and creamy*
Put cucumber, apples, fennel, spinach and ginger in a juicer.
*Whisk in hemp protein until ‘dissolved’ (it will not really dissolve, so the texture of the juice will be a bit ‘crunchy’. Simply omit if you do not fancy it).
*As for the plant milk, I like to add a lot of milk. So much I should call it coconut milk with juice. Add as much milk as you feel fit and blend well together.
